Spicy Chicken Dry Recipe

The Spicy Chicken dry recipe is one of the lesser known chicken recipes. I learnt this recipe long time ago on one of the regional cooking shows on TV in India.

Just like the Pepper chicken dry recipe, this recipe is very very delicious and the people who eat it will end up asking for more!

Ingredients for Chicken Dry Recipe:

  • Chicken - 1/2 kg or 1.1 lb
  • Soya Sauce - 1/2 tsp
  • Tomato Ketchup - 1 tsp
  • Chilli Powder - 1 tsp
  • Tumeric Powder - 1/4 tsp
  • Ginger Garlic paste - 1 tsp
  • Cinnamon + Cloves (Lavang/Laung) Powder - 1/4 tsp
  • Pepper Powder - 1/4 tsp
  • Food color - 2 pinch
  • Oil - 2 tsp
  • Coriander or Cilantro Chopped - 2 tbsp
  • Salt to taste
Preparation Time: 5 minutes
Cooking Time: 25 minutes
Serving: 3-4 people

Cooking Method for the Chicken Dry Recipe:

  1. Put a non-stick pan or khadhai on medium heat. Add chicken and stir for 2 minutes.
  2. Reduce the heat a little and add soya sauce, tomato sauce, chilli powder, turmeric, ginger garlic paste and mix well.
  3. After a couple of minutes add salt, cinnamon and cloves powder and food color. Mix well, close the lid and leave it to cook for 15 minutes on low heat.
  4. Add coriander leaves and oil. Mix well and wait for 2 minutes.
  5. At this stage there will be some liquid from the chicken in the pan. You need to now allow the chicken to cook in its own liquid until all the liquid evaporates.
  6. Add pepper powder, mix well. Wait for another minute and the dish is done.

    Hi Bharti, bharti here.
I want to try this recipe. But the chiken will get cooked?

  • Anonymous said:

I mean how the chicken will get cooked without water? Sorry but m new for Nonveg..Please reply.

  • Bharathi said:

@Bharti, thanks for your comment. No water is required. When you put the chicken pieces in the pan, in a few minutes it will start releasing its own liquid/juices. The chicken will cook in this liquid. Make sure you cook on medium to low heat.

    Hello Bharathi :)

Should I white or black pepper? Also, would the recipe be bad without the food colouring? I could only find blue, green, pink n yellow colouring at my local store.

    Thanks

  • Bharathi said:

Thanks for your comment. Please use black pepper powder. And regarding food color, it does not add to the taste of the recipe. It is just for the color. You can leave it out and the taste will still remain the same.

    Hello Bharathi:)

Thanks for answering my questions. I made this for my boyfriend and he was so impressed. It turned out great! Awesome recipe! Thank you so much!

I've made this twice for my husband and myself. We LOVE it. The only changes I made were no food coloring and no cloves (I couldn't find these at my grocery store.) I also added yogurt and water to create extra sauce. Thanks so much for this delicious recipe!!!! - Lauren

I was looking for a quick chicken recipe for dinner and I zeroed in on this one solely for all the comments it got. Not only was this quick to make, but also loved by my family. I'm saving this in my personal recipe collection for future use.

    Thanks you!

Buh shud the chicken be boiled before putting in non-stick kadhai... am not clear with that???

  • Bharathi said:

There is no need to boil the chicken. It goes directly into the kadhai. Follow the cooking method carefully and the chicken will be cooked. No need to worry.

  • Sona s said:

Hi, this looks very easy. I will surely try this. Did you use chicken thighs or breasts, or does it matter? Thanks s

  • Bharathi said:

@Sona, You can use either chicken thighs or breast. It does not matter. Just make sure the pieces are not too big.
